As fall approaches, here is a recipe to make you feel warm and cozy!
Ingredients:
- 2 medium acorn squashes
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked quinoa or rice
- 1 cup cooked black beans (or any beans of your choice)
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro (optional)
- 1/2 cup shredded cheese (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Squash: Cut the acorn squashes in half lengthwise and scoop out the seeds. Brush the cut sides with olive oil and place them cut-side down on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until the flesh is tender.
- Prepare the Filling: While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
- Combine Ingredients: Stir in the cooked quinoa or rice. Add black beans, diced tomatoes, and corn. Season with ground cumin, chili powder, salt, and pepper. Cook for about 5-7 minutes, until everything is heated through and well combined. If using, stir in the chopped cilantro.
- Stuff the Squash: Once the squash halves are tender, remove them from the oven and carefully turn them over. Fill each half with the quinoa and bean mixture. If desired, sprinkle shredded cheese on top.
- Bake Again: Return the stuffed squashes to the oven. Bake for an additional 10-15 minutes. Continue baking until the cheese is melted and bubbly, if using.
- Serve: Remove from the oven and let cool slightly before serving. Enjoy your stuffed acorn squash as a hearty and healthy meal!
Tips:
- You can customize the filling with your favorite vegetables or proteins.
- For a vegan option, omit the cheese or use a plant-based cheese alternative.
